Crust:
3 C flour
½ C sugar
1 C butter
½ tsp sugar
Filling:
4 eggs, slightly beaten
1 ½ C Karo syrup, light or dark
1 ½ C sugar
3 tbsp butter, melted
1 ½ tsp vanilla
2 ½ C coarsely chopped pecans
Directions:
Grease bottom and sides of 15x10x1 baking or jelly roll pan. Mix crust ingredients in large bowl of mixer until it forms coarse crumbs. Press firmly and evenly into the pan. Bake in preheated overn for 20 minutes. While it is baking, prepare the filling.
In the same mixer bowl, blend all the ingredients except the pecans and mix well. Stir in the pecans. Spread evenly over the crust. Return to the oven and bake 25 minutes or until the center is set. Depending on the oven, it might take another 5 or 10 minutes.
Cool on a wire rack before cutting. Makes 48 bars, cutting 6 rows the long way and 8 rosw the short way.
